I’m Danny — a long-time Orlando local with deep roots in the city’s restaurant world. For years, I worked hands-on in the industry, learning everything from the rhythm of a busy kitchen to the craft that goes into building dishes people remember. I’ve run and owned restaurants, collaborated with talented chefs, and spent more hours than I can count behind the scenes making sure guests left full and happy. I founded a popular local spot in State College called Cafe 210 West and started its popular 55 days challenge as well.
Those years gave me something I’ll always carry:
a sharp palate, an appreciation for culinary creativity, and a genuine love for the people who make Orlando’s food scene what it is.
Today, I channel that experience into something new — exploring restaurants instead of running them, and sharing my honest takes with other food lovers across the city.
Bao’s Castle is my corner of the internet where I get to do just that.
Here, you’ll find:
- Real, firsthand reviews
- Insight from someone who’s worked the line, led teams, and managed dining rooms
- A passion for bold flavors, late-night eats, hidden gems, and dishes that surprise you
- Zero paid placements or sugarcoating — just truthful, experience-based recommendations
I started this site because Orlando deserves a guide created by someone who understands both sides of the plate: the diner and the operator.
Whether I’m trying a place for the first time or revisiting a local favorite, I bring the same curiosity and respect I had when I was running restaurants myself. Food is personal. It’s culture. It’s craft. And in Orlando, it’s always evolving.
Thanks for being here — and for exploring the city one bite at a time with me.
– Danny
